Slow Cooker Split Pea Soup

Growing up, my mother would often serve Habitant Pea Soup and this was always one of my favourite lunches. Every so often, I have a craving for pea soup so when I found a recipe in my America’s Test Kitchen Slow Cooker Revolution cookbook I was all over recreating my favourite childhood soup.

I picked up a ham hock from the local butcher and had some delicious leftover ham steaks from Thanksgiving. I shredded and cubed the ham a bit thicker than the recipe and the result was everything I dreamed of and more. Chunky salty pieces of ham swimming in a creamy, smoky split pea soup; the perfect comfort food to warm your soul on a chilly fall evening.

American’s Test Kitchen Slow Cooker Split Pea Soup

Prep Time: 15 minutes

Cook Time: 9 hours

Total Time: 9 hours, 15 minutes

Yield: 6-8 servings

American’s Test Kitchen Slow Cooker Split Pea Soup

Ingredients

  • 2 onions, minced
  • 3 garlic cloves, minced
  • 1 tablespoon vegetable oil
  • 1 ½ teaspoons minced fresh thyme or ½ teaspoon dried
  • 1/8 teaspoon red pepper flakes
  • 4 cups low-sodium chicken broth
  • 3 cups water
  • 1 pound green split peas (2 cups ), picked over and rinsed
  • 4 carrots, peeled and cut into ½ inch pieces
  • 2 bay leaves
  • 1 smoked ham hock, rinsed
  • 8 ounces ham steak cut into ½ inch pieces
  • 1 tablespoon lemon juice
  • salt and pepper

Instructions

  1. In a medium microwave safe bowl, microwave the onions, garlic, oil, thyme and red pepper flakes, stirring occasionally until the onions are softened, about 5 minutes. Transfer to slow cooker.
  2. Stir broth, water, split peas, carrots, and bay leaves into the slow cooker. Place ham hock in slow cooker and cover. Cook 9-11 hours on low or 5-7 hours on high until peas are soft and tender.
  3. Remove ham hock and shred. Discard skin, bone and bay leaves. Allow soup to settle for 5 minutes then skim fat from the surface with a large spoon.
  4. Stir in shredded ham hock and steak, cover and cook on high until heated through for about 15 minutes. Stir in lemon juice, season with salt and pepper to taste.

Homemade apple cider is so easy to make! Just throw all the ingredients in your slow cooker and four hours later you will have a big batch of fresh, healthy cider to warm you up on a chilly fall night. Making cider for a dinner is also a great idea as your guests will be warmly greeted by the a wonderful apple aroma and for a quick dessert, add a scoop of vanilla ice cream for an apple pie float – guaranteed to impress!

Yield: 6 cups

Easy Slow Cooker Mulled Spiced Cider

Ingredients

  • 5 apples quartered with skin on (recommend 3 McIntosh, 2 Honeycrisp)
  • 3 tangerines – quartered with skin on
  • 1 inch piece of ginger – roughly chopped
  • 2 tablespoons mulled spices
  • ¼ cup raw honey
  • sea salt to taste

Instructions

  1. Place the apples, tangerines, ginger and spices in a slow cooker and set on high for four hours.
  2. After four hours, place a large bowl in a sink with a colander over top and pour the contents of the slow cooker through the colander. Use a potato masher to mash any remaining juices out through the colander.
  3. Pour juice into a large pot and place on the stove over high heat. Bring to a boil and add honey and a pinch of sea salt to taste. Add more honey if you prefer a sweeter cider.

Each week begins with such promise. I wake up on time, have a relaxing shower, blow dry my hair into a half decent style, make my breakfast smoothie while watching the morning news, and remember to take my vitamins. By the end of the week, after one too many late nights (“just one more drink!” “one more blog post!” “one more episode of Orange Is The New Black!”) my morning routine ends up spiraling into a disaster.   In my sleepy, snooze button-happy state I end up convincing myself of the bare minimum morning necessities (“I didn’t sweat too much yesterday, who needs a shower!” “I’ll do my makeup in the elevator, that will save 10 minutes!”).  When I run the risk of skipping breakfast, overnight oats are my back up plan. Healthy, filling and portable, overnight oats are the morning procrastinator’s dream. I bought this handy jar from the Dollar Store, the size is the perfect portion and can easily be thrown into a bag on the way out the door.

I was inspired to create the black forest cake flavour when I received some samples of chocolate coconut water by Cocozia. Creamy, smooth and not too sweet, I loved how their coconut water tastes just like a refreshing glass of chocolate milk, my favourite post run drink. I added tart cherry juice for the classic black forest cake element, and also because real cherry juice supports muscle recovery, as well as the L-glutamine. For additional sweetness I included some raw honey, real vanilla extract and a handful of dried cherries – delightful bursts of cherry goodness. The almond milk and chia seeds add a bit of creaminess to the oats as well as protein, and chia seeds are also a great antioxidant and are high in omega-3 fatty acids. Using chocolate coconut milk really tied all the ingredients together to create a delectable, fiber rich morning treat. Quick and easy, you can sleep in and have a healthy breakfast waiting for you ready to go. Who says you can’t have your cake and eat it too?

Ingredients

  • 1/2 cup rolled oats
  • 1/4 cup unsweetened almond milk
  • 1/4 cup tart cherry juice (not from concentrate)
  • 1/3 cup Cocozia Chocolate Coconut Milk
  • 1/2 scoop vegetarian protein powder
  • 1 scoop of L-glutamine
  • 1 teaspoon raw cocoa nibs
  • 1/2 teaspoon chia seeds
  • 1/2 teaspoon real vanilla extract
  • 1/2 teaspoon raw honey
  • 15 dried cherries
  • pinch of sea salt

Instructions

  1. Combine all the ingredients in a portable, no leak container. Mix well. Place in fridge overnight. In the morning, open the jar and enjoy!
